Jerusalem Artichoke
 
The Jerusalem artichoke is not for the small garden. It can grow very tall (as you can see from the photo). It is a member of the sunflower family and produces small yellow composite flowers. The tubers are not dissimilar to Anya potatoes only white and not red. They make excellent chips and crisps and they will stay in the soil all winter till you need them. I’ve used them in a gratin but some my find them a little too “windy”. My father calls them fartichokes!
 
Update Oct. ‘09:
Last year I had server stomach cramps and attributed it to artichoke chips. Very tasty but I can’t digest them. My wife, on the other hand, can.
