With a sharp knife slit skin at base of abdomen and....
Peel back skin over hind legs.
Continue pulling skin up to head then....
Remove head
Open abdomen and remove all innards. Save best bits for stock
Cut through pelvic arch to remove rectum.
Rabbit and giblets. To just fillet click on....
Filleting by removing hind legs and...
Back fillets....
Either side of the spine.
Bone the legs and the fillets are done.
