Swiss chard is an excellent substitute to spinach and is not dissimilar to leaf beet (perpetual spinach) but has the advantage of not becoming bitter when it goes to seed. The stems should be cooked separately to the green leaf parts. This particular variety called Bright lights is a very attractive vegetable and would go equally well in the flower boarder. The very young leaves can make a colourful addition to salads. Sown in situ then thinned out this variety, an annual, will last a good year, even through the winter months. Excellent fodder for chickens too.
